Peach, Berry & Honey Cooler

A refreshingly fruity drink for a hot summer's day! 

Takes 10 minutes to prep (optional overnight maceration of fruit) 5 minutes to serve 

Makes 4-6 glasses 

INGREDIENTS

150g raspberry (reserve a handful for garnish)
4 ripe peaches  (reserve 1 one for garnish)
50g Black Bee British Summer honey 
2 lemons (juice & zest) 
0.5 tsp sea salt 

To serve 
2 stems of mint 
750ml  bottle of sparkling water 
Ice cubes 
Drizzle of Black Bee British Summer honey 

METHOD

Place the raspberries in a medium bowl, mash with a fork then combine with the honey, juice & zest of 2 lemons and sea salt. Dice the peaches and add these to the mixture. Leave to sit in the fridge for at least an hour to maccerate or ideally overnight for maximum flavour!

Depending on your preference, you can either serve as is with chunks of fruit or a pulp free version, for a pulp free cooler, place the fruity mix into a blender then pass it through a sieve or muslin, leaving you with a vibrant syruppy pink juice. 

Simply divide the cooler mix between glasses, top with ice, sparkling water and garnish with leftover fruit, mint and a drizzle of Summer Honey!
